Just Back From a Two-week Family Road-trip – Without Gaining a Pound!
My family and I just got back from a two-week long summer vacation. It was fantastic! We spent several days camping at Glacier National Park – did some hiking, went white-water rafting… Continued on to Yellowstone, where we camped just outside the park, and drove around the park for a few days, stopping for every scenic loop, boardwalk, and short hike. We saw bison, grizzlies, elk, a young brown bear, mule deer, as well as geysers, mud-volcanos, and some truly incredible scenery (don’t miss the walk down to the brink of the Lower Falls – it was spectacular!) Went to...

During the three-day raw detox that I just finished, desserts were off-limits. But I had lots of time to spend browsing through raw food ‘cookbooks’, and raw food websites, and I saw a lot of desserts that looked really yummy! So, tonight I decided that I’d been virtuous enough all day long (watermelon smoothies all day long, with veggies and hummus for supper) that I had really earned a treat for dessert. One recipe that caught my attention was raw chocolate pudding. I couldn’t find the recipe this evening, but I remembered roughly what the ingredients were –...

Today in the news: Cornell University food scientists found that cocoa powder has nearly twice the antioxidants of red wine and up to three times the amount found in green tea. I’m a big fan of green smoothies, and most days I start the day with a berry smoothie that’s heavy on the greens. Some days, on the other hand, I feel like something different. One of my favorite green smoothies for days that I just want something quick and delicious is a Banana Date Shake. This one is so yummy that my kids are happy to drink it – even if it IS a beautiful emerald green (my daughter doesn’t tend to appreciate that in a fruit smoothie). Here’s my recipe. Banana Date Shake recipe (serves 3 large servings): Ingredients: – 4 cups cold water...

It’s Friday night, and the fridge is looking pretty bare – must plan to go grocery shopping tomorrow! Meanwhile, instead of another trip to the local drive-thru fast food place, why not spend a few minutes more making a dinner that’s not only quick, easy, and inexpensive, but is also delicious AND nutritious! My recommendation – Mexican Black Bean Casserole, with a green salad. As I mentioned a few weeks back, black beans are one of nature’s super foods – high in both soluble and insoluble fiber, antioxidants, minerals such as iron, potassium, manganese and...
