Soups

Black Bean, Black Barley and Blue Corn Posole Soup

boulderfoodie presents Black Bean, Black Barley and Blue Corn Posole Soup posted at boulderfoodie, saying, “When I was planning meals for this week, I knew it was going to be cold for a couple of days in Boulder (and it turned out to be quite cold, with about eight or nine inches of snow), so I really wanted to make some soup.”

Shiitake Noodle Soup

Alisa mentions Shiitake Noodle Soup, posted at Antioxidant Buzz, saying, “When it’s cold and damp outside, my body definitely gravitates to warming, hot and spicy foods. The good news is that many warming, hot and comforting foods are precisely what we need to boost our immunity and fight off viruses.”

Salads

Rustic Mesclun Greens with Sliced Avocado and Cherry Tomatoes, in a Secret Vinaigrette Dressing

Tori suggests Rustic Mesclun Greens with Sliced Avocado and Cherry Tomatoes, in a Secret Vinaigrette Dressing, posted at Tori’s Treats, saying, “This salad is as simple to make as it is refreshing and crisp”

Main dishes

Kaddu Ki Sabji (Spicy Pumpkin)

Jean Gray offers Kaddu Ki Sabji (Spicy Pumpkin), posted at Moonlightened, saying ” This dish is packed with nutrition, tasty and easy to prepare. Give it a try.”

Spinach Red Pepper and Feta Cheese Frittata

My own contribution this month is Spinach Red Pepper and Feta Cheese Frittata, posted at Naturally Radiant. I love how quick and easy this one is to prepare on those nights when there’s not a lot of time for supper – my husband just loves the flavor!

Spinach and Mushroom 'Meatloaf'

David Dicker presents Spinach and Mushroom ‘Meatloaf’, posted at V-Gourmet, saying, “Meatloaf dates back to at least Roman times; it’s mentioned in Apicius’s cookbook, c. 5th century CE. We use a “loaf” recipe adapted from the Eden Alley Cookbook, Stirwell to Heaven. It’s essentially spinach and breadcrumbs, so it’s a nice, heavy comfort food with a little guilt-reducing nutrients.”

MIDDLE EASTERN LENTILS & RICE W/ LEMONY SALAD

Annie Oliverio presents Middle Eastern Lentils & Rice with Lemony Salad, posted at An Unrefined Vegan, saying, “I love just about anything with lentils; they’re quick to prepare, inexpensive, tasty and as they cook down they kind of melt and give way and add a nice creaminess and body to soups and stews. Here’s another simple and filling rice-and-beans dish, this one taking inspiration from the Middle East.”

  1. I was looking for a quick & healthy supper idea, and got inspired by Annie’s middle eastern lentils & rice recipe. I have rice, and I have lentils. What I ended up creating was pretty different – I decided to go Indian instead of middle-eastern, so I used turmeric and cumin and mustard seeds and onion and garlic… Ended up making the whole house smell yummy, and took less than half an hour from start to finish (rice takes a while to cook – there’s no good way to speed that up).

  2. Hello! This is my 1st comment here so I just wanted to give a quick shout
out and say I truly enjoy reading through your blog posts.
Can you recommend any other blogs/websites/forums that deal with the same topics?
    Thanks!
