Raw Curried Carrot Parsnip Soup

Posted by on Apr 2, 2011 | 1 comment

I’ve been experimenting with making better use of my Vitamix. So, in addition to the various smoothies we make every day, I decided to create some delicious soup recipes that would be equally quick and easy to make. I’ve converted a non-raw soup recipe that I used to love, from a Moosewood Restaurant cookbook, into a raw recipe that could be made start-to-finish in my Vitamix – a flavorful curried carrot parsnip soup with the zing of ginger that would be perfect as an appetizer, before pretty much any meal (apparently eating soup before a meal tends to decrease the total amount eaten...

I’ve been experimenting with making better use of my Vitamix. So, in addition to the various smoothies we make every day, I decided to create a delicious soup recipe that would be equally quick and easy to make. This is what I came up with – a simple soup that would be perfect as an appetizer, before pretty much any meal (I read some time ago that eating soup before a meal tends to decrease the total amount eaten during the meal, and it a great way to lose weight without having to consciously limit what you eat). Raw Vegetable Soup Recipe (serves 4) 4 cups hot water 3 medium...

Chocolate Banana Smoothies – Nutritiously Delicious!

Posted by on Mar 30, 2011 | 2 comments

Today in the news: Cornell University food scientists found that cocoa powder has nearly twice the antioxidants of red wine and up to three times the amount found in green tea. Research has demonstrated that the antioxidants in cocoa are highly stable and easily metabolized by the human body, which means they can be readily used by the body. Cocoa has a high concentration of anti-aging polyphenol antioxidants, so it’s possible that incorporating dark chocolate into your diet might alleviate the signs of aging. – – – – I’ve known for a long time that dark...

Alpha Lipoic Acid – Another Supplement Worth Taking?

Posted by on Mar 29, 2011 | 0 comments

As I’ve mentioned before, I’m not a big advocate of taking nutritional supplements – I tend to believe that a healthy diet should provide you with all the nutrients you need. But, every so often I come across something that seems to have significant health benefits, and is not readily available from food sources. Alpha Lipoic Acid may be one of those things. Here’s the result of my initial investigation into Alpha Lipoic Acid (primary information sources: Linus Pauling Institute, and University of Maryland Medical Center). Overview: Alpha-lipoic acid is an antioxidant...

Banana Date Shakes – A Delicious Way to Start the Day

Posted by on Mar 26, 2011 | 5 comments

I’m a big fan of green smoothies, and most days I start the day with a berry smoothie that’s heavy on the greens. Some days, on the other hand, I feel like something different. One of my favorite green smoothies for days that I just want something quick and delicious is a Banana Date Shake. This one is so yummy that my kids are happy to drink it – even if it IS a beautiful emerald green (my daughter doesn’t tend to appreciate that in a fruit smoothie).  Here’s my recipe. Banana Date Shake recipe (serves 3 large servings): Ingredients: – 4 cups cold water...

It’s Friday Night – Try Mexican Black Bean Casserole for Supper

Posted by on Mar 25, 2011 | 0 comments

It’s Friday night, and the fridge is looking pretty bare – must plan to go grocery shopping tomorrow! Meanwhile, instead of another trip to the local drive-thru fast food place, why not spend a few minutes more making a dinner that’s not only quick, easy, and inexpensive, but is also delicious AND nutritious! My recommendation – Mexican Black Bean Casserole, with a green salad. As I mentioned a few weeks back, black beans are one of nature’s super foods – high in both soluble and insoluble fiber, antioxidants, minerals such as iron, potassium, manganese and...
