Raw Indonesian ‘Peanut’ Sauce on Zucchini ‘Pasta’ – I could live on this!

Posted by on Aug 21, 2011 | 4 comments

Oh My God!!! This is so delicious! My husband insisted on licking the handheld blender. And the spoon. And the mixing-bowl. Background: I ordered a spiralizer a few weeks ago, and it arrived last week. I made a zucchini ‘pasta’ with marinated mushrooms for supper that night – my husband and I decided that it was a winner, worth serving again (and again). I used it with the thick curly-fry blade on potatoes a few days later, when my daughter was making a dish with grated potatoes for supper – she loved it! And then, when my parents-in-law were by a few days ago, I...

Just Back From a Two-week Family Road-trip – Without Gaining a Pound!

Posted by on Aug 14, 2011 | 0 comments

My family and I just got back from a two-week long summer vacation. It was fantastic! We spent several days camping at Glacier National Park – did some hiking, went white-water rafting… Continued on to Yellowstone, where we camped just outside the park, and drove around the park for a few days, stopping for every scenic loop, boardwalk, and short hike. We saw bison, grizzlies, elk, a young brown bear, mule deer, as well as geysers, mud-volcanos, and some truly incredible scenery (don’t miss the walk down to the brink of the Lower Falls – it was spectacular!) Went to...

Today in the news : This week, the Lancet Neurology medical journal published the results of an extensive study into the potential prevention of Alzheimer’s disease by avoiding seven significant, yet potentially avoidable, risk factors. They concluded that roughly half of all (33 million) cases of Alzheimer’s disease, worldwide, could be attributed to one or more of these risk factors, and that as much as one quarter of all cases could be prevented through healthier lifestyle choices. * * * The seven risk factors, in descending order of magnitude, were identified as: * Low...

It’s Friday Night – Try a Curried Vegetable and Feta Cheese Tart

Posted by on Jul 17, 2011 | 1 comment

It’s Friday night, the fridge is looking kind of bare, and you’ve already used up this week’s motivation to serve healthy meals for your family. Option 1: call the delivery guy and order a few pizzas Option 2: dig out one of those frozen dinners from the deep freeze; plan to supplement with some popcorn in front of the tv later Option 3: clear out all of the vegetables sitting in the crisper-section of your fridge, and make this delicious, and nutritious, curried vegetable tart! I used to make this all the time! And then I had kids. And for a while they seemed like pretty...

Raw Tomato Soup – with a Bite!

Posted by on Jul 10, 2011 | 1 comment

My husband and I have been leaning toward a healthier diet containing a lot more raw fruits and vegetables. He finished a 12-day juice-fast a few days ago, so he’s still transitioning back to ‘normal’ food. So today for lunch I decided to take advantage of some beautiful tomatoes we bought a few days ago to make a raw tomato soup. I looked at a number of recipes online, found several that looked sort of interesting, and ended up creating a vitamix creation, containing tomatoes, and red pepper, celery, garlic, and fresh herbs from my garden (I love my herb garden in...

Raw Chocolate Pudding – What a Fantastic Way to End the Day!

Posted by on Jul 7, 2011 | 5 comments

During the three-day raw detox that I just finished, desserts were off-limits. But I had lots of time to spend browsing through raw food ‘cookbooks’, and raw food websites, and I saw a lot of desserts that looked really yummy! So, tonight I decided that I’d been virtuous enough all day long (watermelon smoothies all day long, with veggies and hummus for supper) that I had really earned a treat for dessert. One recipe that caught my attention was raw chocolate pudding. I couldn’t find the recipe this evening, but I remembered roughly what the ingredients were –...
