Gluten-free Chocolate/Chocolate-chip Muffins – Yumm!

Posted by on Mar 20, 2015 | 0 comments

For various reasons (mostly health-related) we’ve been trying to cut down on gluten consumption in our household. Mostly that means changing the sort of meals we eat so that bread and bread-like stuff (pizza etc) just isn’t a part of it (I have no intention of spending crazy amounts of money on tiny dense loaves of gluten-free bread!) But the thing I’m famous for is homemade muffins for breakfast on weekends. I wasn’t quite ready to entirely give up on that, so I came up with this gluten-free recipe that’s quick and easy and amazing and moist and rich and yummy....

Coconut-Cranberry Oatmeal Banana Muffins (Gluten-free)

Posted by on Jan 24, 2015 | 0 comments

It’s Saturday morning, the middle of winter – which means I really want something warm for breakfast. Two extremely brown bananas (but not quite to the point of fermentation) sit on my counter (where they were supposed to remind me to peel and freeze them about a week ago, when they would have been perfect for Green Smoothies (still my work-day staple for breakfast and lunch)). What’s for Brunch? Try Pumpkin Chocolate Chip Loaf Cake

Posted by on Mar 28, 2012 | 0 comments

I guess everyone has their own idea about what makes a perfect lazy, Sunday morning breakfast. Sometime around noon, ideally. For me, it’s never been about eggs, bacon, sausage, or any of those traditional Sunday breakfast foods that always leave me feeling just a little un-well afterwards; I’m a muffin person. Waffles are ok too; banana nut-loaf is good. Raisin scones… I can toss together an original muffin recipe (made up from whatever I happen to have lying around the house, based on a simple recipe from my very first cookbook, received as a birthday present when I was...
